Apple and Carrot Energy Bites
I was asked to do a recipe demo at the Wednesday market again this year. This year, I wanted to make something sweet that would be a good after school snack and use seasonal market ingredients. With all energy bite recipes I have done over the years, it was a natural choice to develop another energy bite recipe. I gave myself an A+ for sourcing 5 of the 7 ingredients from the market!

Apple and Carrot Energy Bites
by Inspired by the Seasons
1/3 c shredded carrot
1/2 c grated apple (squeeze out excess juice)
1 1/2 c oats
1/2 c creamy peanut butter
2 T honey
2 T maple syrup
1/2 c finely chopped walnuts
Optional - 1/2 tsp cinnamon and 1/4 tsp cardamom
In a medium sized bowl stir together the peanut butter, honey and syrup until smooth. Add oats and stir until evenly distributed. Add remaining ingredients and stir until fully incorporated., Take 1 tablespoon of the mixture and roll into a ball. Can be served immediately. Store leftovers in an airtight container in the refrigerator for up to a week.. Makes about 20 bites.
