Simple Corn Salad

Hello there! I am back to share a salad of simple ingredients that came together in a spectacular way on this 4th of July weekend. This combines basil from my herb planter with some of my favorite staples to have in the kitchen - red onion, feta cheese, corn and lime. Due to a very wet spring and still wet summer, the corn crop in the Midwest is behind schedule, in fact much of the corn is the field is barely knee high by the Fourth of July as the farmers saying goes. Because of that this recipe is using frozen corn that I cooked up in a pan with some olive oil. I look forward to making this again with local corn fresh from the grill.

Simple Summer Corn Salad

  • 4 c corn, just off the grill is best

  • 1/4 c diced red onion - I soak mine in ice water for 10 minutes and drain to reduce the bite

  • 4 oz feta cheese, crumbled

  • 2 T chopped basil - I used about 20 leaves

  • 1/2 lime juiced, more to taste

  • 2 tsp olive oil

Combine ingredients in a medium sized bowl, serve immediately - freshen up with additional lime juice if you are serving the next day.
