Cranberry Pecan Bars
This is a simple dessert for holiday get togethers. Cranberries are a favorite at our house and a must during the Christmas season. I found this recipe on the Ocean Spray website, my addition is an orange icing which is the perfect flavor pairing for cranberries.
Cranberry Pecan Bars

2 eggs
1 c sugar
1 c flour
1/3 c butter, melted
1 1/4 c fresh or frozen cranberries, chopped
1/2 c chopped pecans
2 tsp fresh orange juice
1/4 c powdered sugar
Preheat oven to 350 degrees. Grease an 8" baking pan.
Beat eggs in a medium mixing bowl until thick, this took about 6 minutes with my handheld beater on high. Gradually add sugar, beating until thoroughly blended. Stir in flour and melted butter, blend well. Stir in cranberries and pecans until just combined. Spread batter evenly in prepared pan.
Bake for 40-45 minutes or until golden brown and passes the toothpick test. Cool and cut into bars. While the bars are cooling, combine the powdered sugar and orange juice. Add more powdered sugar if it looks too running. Drizzle on when the bars are completely cooled and allow icing to set before cutting. Makes 16 servings.
