Braised Asparagus with Shallots
I typically cook asparagus simply by steaming and topping with butter. Since I recently got on to the concept of braising vegetables, I was curious as to how it would work with asparagus. I had success but the shallots really steal the show on this one. Enjoy!
Braised Asparagus with Shallots

- 1 lb asparagus
- 3 T butter
- 1/3 c water
- 2 T chopped shallots
- 1 tsp lemon juice
- pinch of salt
In a 14" or larger frying pan melt the butter under medium heat. Lay the asparagus in a pan in a single layer. Cook on medium high heat for 1 1/2 minutes on each side. Then add the water and cover the pan (if you don't have a matching lid for your pan and cookie sheet works well). Cook turn down to medium low and cook for 3 additional minutes. Transfer to a plate and turn the heat up to boiling. Add the shallots and cook until they start to soften and turn brown. Finish with lemon juice and salt, Top the asparagus with the shallot mixture.
