Corn & Goat Cheese Galette
This was one of those spontaneous, throw together recipes that turned out so well I am still thinking about how good it was three weeks later. Simple ingredients coming together in a most remarkable way.
Corn & Goat Cheese Galette
Adapted from a recipe by the Kitchn
Preheat oven to 400 degrees
- 1 pie crust - here is a link to make your own
- 1 1/2 c corn, frozen or fresh
- 3/4 c red onion, chopped
- 8 oz cream cheese
- 4 oz goat cheese
- 2 eggs, beaten, reserve 1 T for brushing on pie dough
- 2 tsp oregano, divided
- 1 tsp salt
- olive oil for cooking
In a small fry pan heat oil and add red onions. Cook for 5 minutes, add corn and cook until warmed through. Transfer to a plate to cool.
In the bowl of a food processor add - cream cheese, goat cheese,, eggs, I tsp of the oregano. and salt. Transfer to a medium sized bowl. Stir in cooled onion and corn mixture.
Lay pie crust on a parchment paper lined cooking sheet. Add filling up to 2" from the edge. Fold dough over and brush with reserved egg.. Top with remaining oregano.
Bake in oven for 25 minutes.
