Mushrooms - March Farmers' Market Ingredient of the Month
Mushrooms are thankfully available all year long in the Midwest at the farmers' market. There are typically three varieties available from our market vendor. The variety pictured here is Shitake. According to the Herb'n Oyster Mushroom Farm website, "Shiitake has known to be effective in fighting cancer because it builds the immune system. Also lowers cholesterol, lowers blood pressure, and reduces inflammation of the lungs. It is a good source of vitamins B1,B2, B12 and minerals calcium, phosphorus, iron, sodium, and potassium. Shiitake is high in protein and has all nine essential amino acids. Shiitake mushrooms are cultivated. Did you know... sun dried shiitake is high in vitamin D. Good for us who live in the midwest!" Sounds like a cause for celebration!
