Maple & Apple Energy Bites
I have been making this recipe based on one I came across in a grocery store flyer for months now and decided it was time to make a permanent record of it on my blog. This has all the good stuff you want in an energy bite, protein from the peanut butter, ground flax seeds for more protein plus fiber and omega-3 fatty acids, oats to keep you feeling full and walnuts for antioxidants and more omega-3s plus they are sweetened only with maple syrup. I hope you give them a try. I like to keep them on hand for those times I want a quick snack.
Maple & Apple Energy Bites
by Inspired by the Seasons
1 1/2 c old-fashioned oats
3/4 c creamy peanut butter
3/4 c grated Granny Smith or Honey Crisp Apple, (squeeze out some of the juice before adding)
1/2 c finely chopped walnuts
1/4 c ground flax seed, I buy the seed and grind it in my mini processor
1/3 c pure maple syrup
1/2 tsp vanilla
Stir together the dry ingredients in a medium sized bowl. Add the remaining ingredients and stir until well combined. Take one tablespoon of the mixture and roll into a ball. Place in an airtight container in the refrigerator for up to one week. Makes 18-20 bites.
