Ring in the New Year with this bubbly Prosecco Cocktail with added herbal notes from thyme and added zip from lemoncello.
Thyme Prosecco Cocktail

1 bottle of Prosecco, chilled
8 tsp Lemoncello
To make simple syrup:
Combine 1/2 c sugar and 1/2 c water along with 4 sprigs of thyme in a small saucepan. Bring water to a simmer and once the sugar has dissolved, remove from heat and let it cool to room temperature. Remove thyme sprigs, I poured over a strainer to catch any small leaves. Transfer to a lidded container, it can be stored up to one month. .
To make add 2 tsp limoncello, one tablespoon of syrup to each glass, top with prosecco and garnish with thyme sprig.
