Beet, Oatmeal and Chocolate Chip Cookies
It's been a while since I have added a cookie recipe to the blog. Since I can't seem to kick this beet thing, I thought maybe a dessert would bring a close to my recent litany of beet recipes (5 beet recipes at last count). These are chewy cookies and are perfect to take along on your next outdoor adventure and make a healthy after school snack. I am always looking for a snack to give my daughter between school and after school events, these cookies will work well in those situations too.
Beet, Oatmeal & Chocolate Chip Cookies

- 1/2 butter, at room temperature
- 3/4 c white sugar
- 1 tsp vanilla extract
- 1 large egg
- 1/4 c vanilla Greek yogurt
- 1 1/2 c all purpose flour
- 1 tsp baking soda
- 1 /2 tsp salt
- 1 c rolled oats
- 1 c grated beets
- 3/4 c chocolate chips
Preheat oven to 350 degrees.
Cream together butter and sugar until smooth. Stir in egg, vanilla and yogurt.
Add flour, baking soda and salt. Mix only until the flour is fully incorporated. Add in oats and beets and chocolate chips and stir until evenly distributed.
On a parchment lined cookie sheet, drop tablespoons of dough about 1" apart. I don't own a cookie batter scoop, but would imagine it would come in handy for this.
Bake for 13-14 minutes until lightly browned on top. Transfer to a baking rack to cool. Store in a covered container. Makes 24 cookies.
