Tomato, Corn and Goat Cheese Pie

A pie in summer?  If it celebrates the savory flavors of summer then it's worth turning on the oven.  You will want to stick to a meatier tomato for this recipe.  If all you have available is a larger slicing tomato, then remove the seeds and give it a quick pat down to remove the excess moisture.  Enjoy!

Tomato, Corn & Goat Cheese Pie

  • 3 eggs
  • 1 T chives, chopped
  • 1 c Half & Half
  • 4 oz goat cheese
  • 1 tsp salt
  • 2 c cooked corn kernels
  • 1/2 c tomatillos, thinly sliced
  • 1 c sliced roma tomatoes (I use a variety called Juliet)
  • 1 prepared 9" pie crust or make your own with this recipe from Bon Appetit

Preheat oven to 375 degrees.

In a food processor, add eggs, chives, half & half, goat cheese and salt and process until combined.  Transfer to a medium bowl and stir in corn and tomatillos and then fold in tomatoes.

Pour into prepared crust.  Bake in oven 45-55 minutes until it passes the knife test.
