Fruit Smoothie Popsicles
Smoothies are quite popular for breakfast, yet sometimes for me, they can be a little too filling. I have been putting my extra in a cup in the freezer with a Popsicle stick in it for a mid-day snack for a while now and thought it was about time to make an "official" recipe out of it. I had to supplement this recipe with frozen cherries from last year's bountiful harvest. The ones that are pictured here are from this year, we are not sure what happened to this year's crop, but we probably only got about 2 pints from our 7 year old tree. Hope you give this healthy frozen treat a try this summer!
Fruit Smoothie Popsicles
by Inspired by the Seasons
- 1 c vanilla Greek Yogurt
- 3 T honey
- 3/4 c frozen fruit, I used a combo of frozen mango and fresh cherries
- 1 c granola or make your own with this quick recipe - (I skipped the orange and ginger)
You will also need - 6 - 3 ounce Dixie cups, aluminum foil cut into 3" squares, 6 Popsicle sticks
Add yogurt, fruit and honey to a blender and process until smooth. Add granola to bottom of cup, about 1 T per container. Fill with smoothie mixture and top with another layer of granola. Cover the cup with aluminum foil and insert Popsicle stick. Freeze for 3-4 hours. Enjoy!
