Creamy Tomatillo Sauce
Tomatillos were a new addition to our vegetable garden this year and now that it is September it is safe to say that this one deserves a place in our garden next year too! Their cheery yellow blossoms can't be beat and the plant itself has an Asian feel with it's branching limbs. This is a no fuss plant that survived our 3 week dry spell this summer. This sauce came together in no time and the onions from our garden added a nice sweetness.
Creamy Tomatillo Sauce
Adapted from Everyday Food Jan/Feb 2011
- 8 tomatillos husks removed
- 1 T green pepper sauce
- 1 medium yellow onion, cut into 1" pieces
- 1/2 c buttermilk
- 1/2 peeled avocado
In a small saucepan, place tomatillos add enough water to cover them by 1". Bring to a boil over medium high heat. Reduce to a rapid simmer and cook until tender about 7 minutes. With a slotted spoon, transfer to a blender and add onion, puree until smooth. Add green pepper sauce, and avocado. Add buttermilk until desired consistency is achieved.
This is great over eggs too!!
