Sweet Potato Bites
This sweet potato appetizer uses the same mixture that I came up with for the stuffed mushroom recipe. You could always split the two recipes and fill half the mushrooms and then take the remaining mixture to use here. I know there are some people who are not real fond of mushrooms, so this is one way to please more than one appetite on your guest list and you get two appetizers for half the effort!
Sweet Potato Balls

3/4 c roasted and mashed sweet potato
1 T goat cheese
1/4 c packed, fresh spinach
1 green onion, chopped
1/2 tsp olive oil
I/4 tsp salt
1 c panko or bread crumbs
Spray olive oil
Place a rack in the upper third of the oven and preheat to 400 degrees. Place spinach, green onions and olive oil into a blender or food processor and blend until finely chopped. Stir this mixture into the sweet potatoes and then add the goat cheese.
Next, put bread crumbs in a shallow bowl. Take a tablespoon of the sweet potato mixture and roll into a ball. Roll in bread crumbs until evenly coated. Transfer to a parchment paper lined cookie sheet and spray with olive oil. Bake in oven for 12-15 minutes or until bread crumbs become lightly browned.
