Cucumber and Lime Juice
It is not unusual for a weekly trip to the garden to yield a 10 cucumber harvest in August. Our cucumbers get used up in a number of ways, as an addition to a veggie tray served with this feta and yogurt dip, with rice vinegar or added to a salad. This juice recipe is by far the best way to keep up with their abundant growth.
Cucumber and Lime Juice

- 3-4 large cucumbers, peeled, seeded and chopped into 2" chunks
- 1/2 c water for blending
- 2 tsp freshly grated ginger
- Juice of 1 lime
- 2 T sugar
Place cucumber and water into a blender and process until smooth. You may need to do this in batches. Transfer to a fine mesh sieve over a large bowl to drain and press out any remaining juice with a rubber spatula.
In a glass pitcher, add ginger, sugar and lime juice stir together until sugar is dissolved. Pour in cucumber juice, stir and refrigerate 1-2 hours, taste and add more sugar if desired. I garnished with a sprig of lemon thyme.
